Holiday Rice

Prep Time-10 | Cook Time-20 | Makes 4 Servings

Delicious side dish on a holiday, or the main course on a Monday!

Ingredients:

  • 2 Tbsp EVOO
  • 1 Cup of cooked rice (or a package of rice/ rice mix- i like the 7 grains package from Aldi)
  • 1/2 Onion- chopped
  • 2-3 Garlic cloves- chopped
  • 4 Cups of Spinach- chopped
  • 1 Can of Chickpeas- drained and rinsed
  • 1/2 Tbsp Thyme
  • 1/2 Tbsp Rosemary
  • 1/4 Cup Pecans- chopped
  • 1/2 Cup Crazins
  • 1/3 Cup Shredded Parmesan
  • Salt and Pepper to taste

Instructions:

1- Gather all ingredients, chop and prepare all of them.

2- In a large pan on medium heat, add the EVOO and saute the onion and garlic. Add the Thyme and Rosemary and stir until fragrant.

3- Add the Spinach, Pecans, Crazins, and Chickpeas. Stir and cover with a lid for 5 minutes. then add the cooked rice (you may or may not need to add a Tbsp of water or so). cover and let it sit for about 10 minutes, stirring frequently.

4- Taste and add Salt and Pepper to taste. Serve with Parmesan on top.

NOTES:

This is delicious as a side dish on holidays, or made with some roasted squash or sweet potato as a meal of its own.

OTHER ADD INS– Use other beans or leafy greens, add more cheese, bake inside of an acorn squash, add other vegetables or mushrooms, use a different kind of grain, put it onto a rice for a warm salad bowl…
