Beef Goulash

Prep Time- 20 min | Cook Time- 45 min | Makes 4 Servings

Inspired by my friend’s Hungarian Goulash recipe <3 Another household favorite!

Ingredients:

  • 2 pounds of Beef Stew Meat (I usually cut the pieced into small bite size chunks, but this is up to the cook)
  • 2 Tbsp Paprika
  • 2 Tbsp Cumin (or crushed Caraway Seeds)
  • .25 tsp Salt
  • Black Pepper – to taste
  • 1 Tbsp Oil (your preference, I use Olive Oil)
  • 1 large Onion– diced
  • 1 Red Bell Pepper– diced
  • 14 oz can Diced Tomatoes (I prefer petite diced)
  • 14 oz Broth (I use veggie stock, but beef or chicken works too)
  • 1 tsp Worcestershire Sauce
  • 3-5 cloves Garlic – minced
  • 2-3 Bay Leaves
  • Slurry– 1 Tbsp Cornstarch and 2 Tbsp Water
  • OPTIONAL– Mashed Potatoes to serve with 🙂

Instructions:

1- Gather all ingredients. Prepare the Beef by chopping it to the size you prefer. Then, cover it with the Cumin, Paprika, Salt, and Pepper and mix until well coated. Set it aside to rest 15 minutes or until the rest of the ingredients are all chopped and ready.

2- In a large pot on medium heat – add the Oil until hot. Add the Peppers and Onions and sauté while frequently stirring for about 5 minutes. Add the Beef mixture and the Garlic and cook until the beef has browned- about another 5-7 minutes.

3- Add the Diced Tomatoes, Broth, and Worcestershire Sauce and bring to a simmer, then add the Bay Leaves. Simmer on medium for about 20 minutes.

4- Bring pot to a lite boil and then add the Slurry and mix well. This will thicken the Goulash very quickly. Turn to low for 5 minutes and then remove from heat.

NOTES:

HOW TO ENJOY– This is great with some mashed potatoes but you can also enjoy with some bread, over rice, or even with a noodle such as macaroni.

OPTIONAL INGREDIENTS- You can use crushed Caraway Seeds instead of Cumin- I just never have it on hand; you can use ground beef or no beef at all- I made this recipe as is without beef when I was on a vegetarian diet and it was still delicious!; you can use just about any kind of broth you like.
