Creamy Cashew Dressing

Prep Time- 10 minutes | Makes 4-6 Servings

This dressing is creamy and zesty! I sometimes add more sriracha to give it a bigger kick!

Ingredients:

  • 1/2 Cup Unsalted Roasted Cashews (if salted, just add less salt yourself)
  • 3 Tbsp EVOO
  • 2 Tbsp Rice vinegar
  • 3/4 tsp Honey
  • 1 Garlic Clove- minced
  • 1 tsp Ginger (+/- to taste)
  • 1tsp Sriracha (+/- to taste)
  • Salt and Pepper to taste
  • about 1/4 Cup Water- just enough to make it as thin or thick as you like!

Instructions:

1- Gather all ingredients as well as a food processor or blender. If you don’t have one, you will not get a creamy consistency, but you can try using a mortar and pestle or just chopping and smashing the cashews (I have not tried the latter 2 methods).

2- Add all ingredients and blend! Taste and adjust ingredients to fit your preferences. Use less water to make it thicker for dipping, or more water to make it thinner for a dressing.

NOTES:

OTHER ADD INS– This is super versatile, you can increase, decrease, or remove ingredients, or add new ingredients like spices, your favorite hot sauce, or lemon juice.
