Garlicy Spinach & Feta Sauce

Prep Time- 5 | Cook Time-10 | Makes Servings

SO DELICIOUS AND SO EASY! I Love this Sauce and everyone I’ve ever served this to has loved it too.

Ingredients:

  • 2 Tbsp EVOO
  • 1/2 Onion, chopped
  • 4-6 Cloves of Garlic, chopped (Yes its supposed to be very garlicy, per the title…)
  • 1/4 tsp Red Pepper Flakes
  • 2 Tbsp Water
  • 1/4 Cup Fetta Cheese
  • 2 Tbsp grated Parmesan
  • 400g Fresh Spinach, roughly chopped
  • Salt and Pepper to taste

Instructions:

1- In a pan on medium heat, add the EVOO and saute the Onions. Then add the garlic and Spinach until wilted.

2- Remove from the pan and let it cool for at least 10 minutes. Then put into a blender with all the other ingredients (not the salt and pepper), and blend until smooth. Add more or less water to achieve your desired consistence. Add salt and pepper to taste.

I love this sauce over a buddha bowl, over toast, over eggs, or just right from spoon to mouth (just kidding…..).
