Roasted Pepitas (Pumpkin Seeds)

Prep Time- 5 minutes | Cook Time- 30 minutes | Makes 2 Cups

A quick and easy snack that just about anyone can enjoy making AND eating!

Ingredients:

  • 2 Cups of Raw Pepitas (Raw Pumpkin Seeds)
  • 1 Tbsp Olive Oil
  • Salt and Black Pepper
  • ALTERNATIVE- try out other spices!

Instructions:

1- Gather all ingredients and set the oven to 300°F (or about 150°C). Line a large baking sheet with parchment paper.

2- Wash your raw pepitas– I put them into a bowl and wash them in cool water, then drain the water and wash them again- sometimes a third time. I wash these the same way I wash rice. You want to make sure there is no dust or shell pieces left among your seeds. Gently pat them dry with a kitchen towel (or paper towel) and put them into a bowl.

3- Add the Olive Oil, and season them to your liking- I add about 1/2 tsp salt and about 1/4 tsp black pepper. You can also experiment with other seasonings at this point.

4- Bake for 30 minutes- every 10 minutes take them out and skootch them around so that they are getting baked evenly, especially if the baking sheet is crowded.

5- Lay out a kitchen towel (or paper towels) on your counter and spread out the seeds to cool. You may hear them popping and crackling until they’ve cooled down. Store them in an airtight jar in the fridge- because oil spoils!

NOTES:

OTHER ADD INS– Try out other spice combinations! Chili Lime, Garlic, Cajun, Curry- the options are truly endless! Let me know what you tried!
