Simple Drop Biscuits

Prep Time- 15 minutes | Cook Time- 15 minutes | Makes about 9 biscuits

Drop biscuits that you can easily whip up for breakfast any day of the week!

Ingredients:

  • 2 ¼ Cups Flour
  • 1 Tbsp Sugar
  • 1 Tbsp Baking Powder
  • 1 tsp Salt
  • 1/3 Cup Butter
  • 1 Cup cold Milk

Instructions:

1- Gather all ingredients and set the oven to 425° F (or about 218°C) and line a baking sheet with parchment paper.

2- In a large mixing bowl with a rubber spatula, mix together all dry ingredients- the first 4 ingredients (don’t use a whisk for this recipe).

3- Add the butter to the dry mixture: you can EITHER- freeze the stick of butter and grate it, OR- cut the butter into half inch slices, then add it to the dry mixture and pinch each one with your hands (or use a pastry cutter) until all the butter is about pea sized or smaller.

4- Add half the milk and mix it together, then add the rest of the milk. Make sure the milk is cold so that the butter does not soften too much before baking.

5- Place the mixture onto a floured surface and kneed about 15 times, not for too long.

6- Using a large soup spoon or a pastry scoop, place portions of about ¼ Cup – 1/3 Cup onto the parchment paper. Leave about 2 inches around each biscuit so that when they expand they don’t run into each other (larger biscuits means you end up with fewer, and they need to bake a tiny bit longer).

7- Bake for 13- 15 minutes until the peaks start to get golden brown. Let then cool for 5- 10 minutes before eating.

NOTES:

FLOUR– sometimes I like to add a different kind of flour, the ratio that seems to work for me is 2 cups AP flour + ¼ Cup of some other kind of flour- I have used Buckwheat flour and regular wheat flour successfully with this ratio. The biscuits pictured here contain ¼ Cup Buckwheat flour, so if you make yours with only AP flour, they will turn out just a little whiter in color but just as yummy!

OTHER ADD INS– If you want to get fancy with it for a holiday (or a Wednesday), you can easily add things to enhance the flavors. Ideas I’ve tried with success include: shredded cheddar and scallion biscuits, or rosemary and sea salt biscuits. Let me know about your own fancy take on these!
