Slaw Mix (for fish tacos!)

Prep Time- 10 Minutes | Makes About 6 Servings

A super simple slaw mix perfect for a fish taco!

Ingredients:

  • 2 Cups of Shredded Cabbage (or use a prepackaged Coleslaw Mix with no dressing)
  • Juice of half a Lemon (or a Lime– use what you have)
  • .5 Cup Plain Greek Yogurt
  • 3 TBSP Mayonnaise (Don’t like real Mayo? Try Safflower Mayo!)
  • 1-2 Jalapenos– chopped or sliced to your preference
  • .5 Tsp Garlic– minced
  • .25 Tsp Ground Cumin
  • Salt and Pepper to taste

Instructions:

1- Gather all ingredients, shred your Cabbage (if you need to), chop your Garlic and Jalapeno (I use cooking gloves for the peppers), and juice your Lemon or Lime.

2- Mix all ingredients together in a bowl and taste. Adjust salt, pepper (or honestly anything else) to your preference. I like to let this sit in the fridge for about 15 minutes before eating to let the flavors dance together a bit.

3- This recipe is SO simple I don’t even need a step 3. But here you go anyway, step 3- find yummy new ways to enjoy this slaw!

NOTES:

YOU CAN use this slaw on a fish taco, on a chicken patty sandwich, or even on a bun/ in a wrap with just some tomato and onion!

OTHER ADD INS– Don’t like real Mayo? Try Safflower Mayo! Don’t like Jalapeno but still want some heat?- Try a little Sriracha instead! Don’t want heat?- Omit the jalapeno, and possibly try some bell pepper and/or onion instead!
