This here is the perfect Thick and fluffy pancake, whether you make it plain or fill it with fun fixings! A family favorite and crowd pleaser!
Ingredients:
- 1.5 Cup Flour (I use All Purpose)
- 3.5 tsp Baking Powder
- 1 tsp Salt
- 1 Tbsp Sugar
- 1.25 Cup Milk (I’ve successfully used oat milk, skim, and whole milk)
- 1 Egg
- 3 Tbsp melted and cooled Butter, and extra for the pan
- 1 tsp Vanilla
- OPTIONAL- copped fruit like blueberries or strawberries, chopped nuts like walnuts or pecans, shredded coconut, cinnamon, dried fruit like crazin’s or dried cherries
* See notes at the bottom for ingredient alternatives and other ideas!
Instructions:
1- Mix together all of the dry ingredients in a large bowl.
2- Add the Milk, Butter, and Egg. This should be a thick batter, not runny.
3- Heat a little butter in the pan on medium-low heat. Just enough butter to make the surface not stick.
4- Spoon some batter into the pan. You can make large pancakes or smaller ones but they will be thick. Cover the pan with a lid and let them cook until you see them rise and the sides look like they’re drying out. ** Check the bottoms to make sure your heat is low enough not to burn them before they’re ready to flip. Adjust your heat accordingly.
5- Flip the pancakes and cook until done. You can use the cupcake method of seeing if they are cooked all the way by poking a toothpick into the center and if anything wet sticks to the toothpick when you pull it out it means it needs to cool a little longer.
NOTES:
OTHER ADD INS– Honestly the sky is the limit here! any kind of pancake you ca dream of can probably be made with this base! Peanut butter, caramel, apple pie, chocolate chip, red velvet bananas foster… have Fun!
