Tortillas

Prep/Rest Time- 35 minutes | Cook Time- 25 minutes | Makes 4 Large tortillas (or 6 medium ones)

These Tortillas blow store-bought tortillas completely away! Once you try these, you may never buy premade ones again!

Ingredients:

  • 3 Cups Flour + extra for dusting
  • 1 tsp Salt
  • 1/2 tsp Baking Powder
  • 1/3 Cup Olive Oil + extra for the pan (or use spray oil for the pan)
  • 3/4 Cup Warm Water (about 105°F- 110°F OR 40.5°C – 43°C)

Instructions:

1- Gather all ingredients, a large mixing bowl, a very large pan (I use cast iron for this), and a rubber spatula- don’t use a whisk.

2- Mix together all dry ingredients (the first 3 ingredients). Then, add the oil and mix that well into the four. Then, add the water and mix until you can form a rough ball of dough in the large bowl.

3- Cover the bowl with a towel and let this rest for 20-30 minutes.

4- Set a large pan (I use a cast Iron pan for this) on medium/ high heat. Place the dough ball onto a well floured surface and divide into 4 (or more) equal parts.

5- Dust the top of the first piece of dough with some flour and flatten it out- I use my hands to press it into a flat disk shape and then pick pick it up to lightly stretch the dough out, you can also use a rolling pin to flatten it but make sure to dust the top well so it doesn’t get sticky. I only flatten one part at a time, while I’m waiting for the previous one to finish cooking.

6- Very lightly oil the pan (I use just a touch of spray oil) and carefully place the flat tortilla dough evenly onto the pan. If you made it too large, you can smoosh the dough together a little bit in the middle to get the edges to fit (and consider making smaller parts for the rest of your tortillas depending on how much larger the dough was compared to your pan). Cook until you see large bubbles and the dough looks dry on top, then flip- about 4 minutes. If you aren’t sure, check the bottom, the tortilla should have dark spots but not be dark brown all over.

7- Continue flattening and cooking the tortilla until you have a beautiful pile of deliciousness (i.e. you use up all the dough).

NOTES:

WAYS TO ENJOY THESE TORTILLAS– I love these tortillas with my Bean Burrito Filling, you can have them with roasted eggplant and tomato sauce, use them for tacos (especial fish tacos!), or you can warm them up in the morning and have them along with eggs for breakfast!

OTHER ADD INS– You can add spices to the dry mixture in order to add some more flavor to these, but I enjoy them plain.
